You need to find about a dozen settings, and several of them are under Screen Time. Even when everything is turned off, the base models remain on disk, which is about 12 GB. I wrote RemoveMacAI to do everything in one go. It disables Siri, Writing Tools, Genmoji, Image Playground, ChatGPT extension, and all summaries, then it deletes the templates and prevents macOS from downloading them again.
