New York magazine’s Rachel Handler entered the “chocolate vortex” and came away with a conclusion that might not thrill aficionados: The future of chocolate could be one in which they have to pay good money to indulge in the real stuff. His sprawling piece begins with a box of bland-tasting Sno-Caps and a now-famous online screed from the grandson of the man behind Reese’s Peanut Butter Cups, accusing Hershey of trading real chocolate and peanut butter for cheaper “compound” mixes. Handler says chocolate really does taste different these days, lamenting “the added indignity of being told it doesn’t.” The story explores the FDA’s rules on what can legally be called “chocolate,” industry efforts to relax those standards, and how cost-cutting measures such as replacing vegetable oils with cocoa butter can reshape flavor and texture.

Chocolate historians, sensory scientists and former R&D staffers tell Handler that the beloved candy has been reformulated into something sweeter, more waxy and less “real.” Meanwhile, climate pressures on cocoa production and concerns about child labor complicate the industry’s future, while AI-designed “faux-cocoa” offers a glimpse of a world in which substitutes become more common. Handler also imagines a different path: an industry that protects farmers and other stakeholders but charges consumers the true price of chocolate, potentially putting the real product out of reach of many people. The story ends with a visit to this more luxurious world: Handler tastes chocolates from Vosges Haut-Chocolat, based in Chicago. They’re divine, but 16 truffles cost $64. Read the full article.
